Raw Dairy-Free Ice Cream Sundae



Raw Dairy-Free Ice Cream Sundae

Ingredients

2 cups raw cashews
1½ cups water
1/3 cup raw honey or raw agave
½ tsp. stevia
½ tsp. salt
2/3 cup golden raisins
1 Tbsp. vanilla extract
¼ cup coconut oil
or 2 Tbsp. cacao butter
1 vanilla bean
OR 1 tsp. vanilla powder

Toppings
Raw Chocolate Syrup
Raw Raspberry Syrup
Nuts
Whipped Cream

Directions

Soak cashews in water for several hours. Drain and rinse. Add all ingredients to blender and blend until smooth. Refrigerate for several hours until well chilled. Pour into ice cream maker and process according to manufacturer's directions.

Top ice cream with chocolate and raspberry syrup, nuts, and whipped cream.

Chocolate Green Smoothie





This reminds me of Peanut Butter Mood at Jamba Juice, but with even more nutrition.
Ingrediants:




~3 Large Beet Greens~ &/or a few handfuls of Spinach (Yes the tops of beets are edible and a great in green smoothies.)


~1 1/2 C Almond Milk (add a 1 tbs. of stevia if unsweetened)
~1 handful of baby carrots
~5 small stocks of broccoli
~2 Pears
~1 Cup frozen strawberries
~1 Banana
~2 tbs dates
~1 tbs Flax seed powder
~1 -2 tbs. almond or peanut butter


Whirl whirl whirl and enjoy.

Orange Smoothie (No Oranges needed ;)


Ingrediants:

  • 1/2 small Cantaloupe

  • 1 1/2 Cup Frozen Mango

  • 2 Carrots

  • 1 C. Frozen Pineapple (or a 6 oz. can with juice)

  • 1 C. Water

  • Cut a cantaloupe in half and scoop out the seeds and pulp. Place seeds/pulp in a blender with a cup of water and blend. The water will turn creamy white. Strain out any seed pieces and put strained cantaloupe water back into the blender.

    Blend and Whirl into a delightful Orange Smoothie


    Creamy Rasberry Green Smoothie


    Ingrediants:



    • 2 Kale leaves

    • 1 Green Apple

    • 1/2 Avacado's

    • 1/2 C Rasberry

    • Vanilla Greek Yogurt

    • 1/2 Cucumber

    • 1/2 C Cranberry Juice

    • 1 Tbs. Ground Flax Seed

    • 1 Tbs. Honey

    Amanda's Green Smoothie

    This is my husbands favorite Green Smoothie. Ingrediants:

    • 3 Large Kale Leaves

    • 2 Apples cored

    • 6 oz can of pineapple w/ juice

    • 1 Lime juiced

    • 1/2 Carrot

    • 1/2 cup of Cranberry juice

    • 1/2 cup ice

    • 1 Tablespoon Ground Flax Seed

    • 1 Tablespoon Honey

    Method: Blend all together. Its best to start with the Kale and cranberry juice to get the blender going then add other ingrediants.

    Mediterranean Chicken & Artichoke with Spinach & Toasted Pine Nut Couscous


    This is my own Creation.
    Mediterranean Chicken, Artichoke, and Spinach with Toasted Pine nut Couscous.
    Ingrediants:
    2 lbs Chicken breasts
    1 Can Artichoke Hearts w/ Brine
    1 med. Onion Chopped
    1 Clove Chopped Garlic
    1 Can (14 oz) reduced sodium Chicken Broth
    1 Medium Zucchini
    1 Cup Halved Grap Tomatoes or 1/2 Cup Roasted Red Tomatoes
    2 Cups Fresh Spinach (about 2 handfuls)
    1 Box Toasted Pine Nut Mediterranean flavored couscous
    2 Tbs. Mediterranean Spice
    1/4 tsp. Crushed Red Pepper Flakes
    1/4 Cup Balsamic Vinegar
    Chopped Parsely for Garnish

    Method:
    In a slow cooker combine chicken broth, chicken breasts, can of Artichoke hearts, onion, garlic, and spices. Cook for 3-4 hours
    Place Chopped Zucchini, Tomatoes, Spinach, and Balsamic Vinegar in pot. Cover and cook for about 15 minutes or until cooked completely.
    Remove Chicken & vegetables with a slotted spoon and set aside. Stir Couscous mix into the remaining liquid. Cover and cook 5 minutes or until the remaining liquid is absorbed.

    Serve Chicken and Veggies over Coucous. Sprinkle Chopped Parsely over top.
    Enjoy!

    Blackened Chicken & Sweet Cilantro Dressing

    Blackened Chicken
    Ingredients:
    •4 boneless skinless chicken breasts
    •2 Tablespoons blackening seasoning
    •5 - 6 c. Romaine lettuce, chopped
    •1 cup diced watermelon, peaches or blueberries (any combination will work)
    Method:


    Preheat grill. Pour seasoning in a gallon size zip top bag. Dry chicken breasts and place 2 at a time in the zip top bag. Zip the bag shut and shake until chicken is evenly coated with seasoning. Place chicken on preheated grill and cook until chicken is no longer pink. Remove from grill and slice. Serve over lettuce and fruit. Drizzle with Sweet Cilantro Lime Dressing.
    Sweet Cilantro Dressing
    Ingredients:
    •¼ c. cilantro
    •½ c. light mayo
    •¼ c. honey
    •¼ c. cream
    •1 T. freshly squeezed lime juice
    Method:


    Blend all ingredients together in a blender until nicely pureed. Serve over blackened chicken salad.

    Banana Nut Flax Bread

    Ingrediants:
    1/2 cup unsweetened applesauce (if sweetened, lower sugar to 1/4 cup)
    1/4 cup(approximately 2-3 tbsp) fat free plain yogurt
    1 cup mashed bananas
    7 tbsp (about 1/2 cup) ground flax seed
    1/2 cup natural sugar
    2 cups whole wheat flour
    1/4 tsp Vanilla
    1/2 tsp salt
    1/2 tsp baking powder
    1/2 tsp baking soda
    2 Lg. Eggs
    1/2 cup chopped Walnuts

    Directions:
    Cream together the applesauce, eggs, sugar,vanilla, and yogurt.
    Add the flour, salt, baking powder, baking soda, walnuts, and mashed bananas.
    Mix until combined.
    Pour into bread pan and bake at 375*F for about a 40 min.

    Mini Spinach Quiche

    Be careful when buying premade biscuit dough. I have found Pillsbury has enough trans fat to even register on the Nutrition facts. The only place I can find biscuits prepared with no trans fat is Walmart and the there in store brand of biscuits.


    1 cup mozarella cheese
    4 oz light cream cheese
    1/4 Cup parmesan cheese
    1 egg
    10 oz frozen spinach, thawed and water squeezed out
    1/2 Cup sauteed onions


    Mix altogether

    Chicken, boiled and shredded
    Puff pastry sheets or other biscuit or pie crust
    Layer in muffin cups, cooked chicken, a melon baller scoop of cheese/ spinach mixture. Top with crust of your choice. Puff pastry sheet works well. Bake at 400 degrees for 30 minutes.

    Healthy Mashed Sweet Potatoes & Coconut Milk

    Sweet potatoes are not related to regular potatoes. They are a completely different vegetable. They are more nutrient dense than regular potatoes, and great source of antioxidants, essential for protecting cells from damage.


    1 ½ lbs sweet potatoes (about 3 medium)
    ¾ c. coconut milk
    1 Tablespoon minced fresh ginger
    ½ teaspoon salt

    Directions
    1. Prick sweet potatoes with a fork in several places. Place in baking dish and bake at 425ºF until tender all the way to the center, about 1 hour.
    2. When cool enough to handle, peel off and discard skin. Transfer the sweet potatoes to a medium bowl and mash thoroughly with a potato masher. Add coconut milk, ginger and salt; stir well. Reheat in the microwave for 1-2 minutes or in the oven for 8-10 minutes. Serve warm.

    Healthy Zucchini Bread



    1 cup applesauce

    1/2 cup oil

    1 cup honey

    3 eggs

    2 cups shredded zucchini

    2 1/2 tsp. vanilla

    3 cups whole wheat flour

    1/2 cup flaxseed meal


    1 tsp. salt

    1/2 tsp. baking powder

    1 T. cinnamon

    1/2 cup chopped nuts, optional

    Beat applesauce, oil, and honey together in a large bowl. Add eggs, zucchini, and vanilla. In a separate bowl, combine flour, salt, baking powder, and cinnamon. Add to wet ingredients along with nuts. Beat until just combined. Pour into two greased loaf pans. Bake at 350 for 45 minutes or until a toothpick comes out clean. Shake the loaf pans as soon as you take them out of the oven for easy removal. Yield: 2 loaves

    Scrambled Egg Flourentine

    We often make this healthy dish for breakfast.
    Ingrediants:
    1 sm. bag Spinach
    1 lrg. Orange Pepper (or whatever color is on sale)
    2 diced tomatoes
    1/2 onion
    1-2 Zucchini
    6 Eggs (1/2 w/ yolks and 1/2 egg whites)
    3/4 cup cheese
    Olive Oil

    Sprinkle in:
    Herbs de' Province (Italian Seasoning)
    Garlic Powder
    Ground Black Pepper

    Method:
    Spray pan with Olive Oil and wilt Spinach. Chop Pepper, Zucchini, Tomatoes & Onion. Add to skillet once the Spinach is wilted, Add spices and Saute. Once vegetables are soft add 3 eggs with yolks and add 3 egg whites. Stir until almost completely cooked through and then add most of the cheese. Cook completely. Dish up and sprinkle with the remaining cheese.

    Other option
    Place into a tortilla and cover with salsa

    Broccoli Cheddar Bake

    Broccoli Cheesy Bake
    Ingredients:
    •3-4 large heads of broccoli (enough to fill a 9x13 pan)
    •I small package of Kraft Original Velveeda Cheese
    •1 package of Ritz crackers
    •1 square margarine
    Method:



    1. Steam or cook broccoli.
    2. Place 2 Tbsp. of margarine on the bottom of the dish.
    3. Evenly distribute broccoli in dish.
    4. Thinly slice Velveeta Cheese and place on top of broccoli.
    5. Crush Ritz crackers and layer on top of cheese.
    6. Pour remaining melted margarine on top.
    7. Cover with foil.
    8. Bake at 325 until cheese is melted and dish is warmed through.

    Green Drink

    Green Drink
    Ingredients:
    •1 cup of unsweetened pineapple juice (or pour off the juice from 1 can of pineapple rings)
    •4 cups of fresh spinach
    Method:


    Blend until smooth.
    That's the base recipe... but feel free to add carrots, cucumbers, apples, or other leafy greens. If you're looking for quick and simple, it doesn't get any easier than 2 ingredients! (Spinach is a nutrient-packed superfood and should therefore always be the base vegetable.)

    Makes 2 (3/4-cup servings). Nutrients per serving: 80 cals, 3 gm fiber, 3 gm protein + good source of Vitamin A, K, C, folate, calcium, iron and the phytochemicals Lutein and Zeaxanthin (these phytochemicals help protect the eyes).
